I need to know how I could setup phpmyadmin on one of my sites please.
I have tried pointing to the config file to the db listed on my control panel:
db1.slc1.stackable.com
Then login using both my main username/password (I also tried using the database username and password with no luck)

I've attached a config that does work fine for me with a fresh phpMyAdmin installation. You'll want to be *SURE* to change the 'blowfish_secret' value to some other random value.
After your config file is in place, you should be presented with a login page for phpMyAdmin in your browser when you navigate to your installation. Use the 'Database Username' for your Stackable database and the password you have assigned to your database. (You can reset the database password if you don't remember it.)
